End of the harvest season and what to do with all those luscious tomatoes good friends and family are sharing? Oven roasting to be bring out the sugars and fall colors!
Slice tomatoes1/4″ thick, blot dry between layers of paper towels, lay on parchment paper on cookie sheet; brush with garlic infused olive oil, sprinkle with sea salt, (and herbs de provence if desired); slow roast at 250 degrees for several hours, until they reach your preferred state of firmness and sweetness. Yumm – just like candy!
